Background knowledge of chemistry and biochemistry would be desirable.
Teaching Methodologies
Exposition for the presentation of theoretical concepts, laboratory practice for nutritional characterization of foods and their use.
Videos, slideshows and search and analysis of tables of food nutritional values and animal needs.
Conducting rations formulation exercises.
Search and analysis of animal feed produced according to the organic rules.
Learning Results
The learning outcomes are as follows:
1. Understand the structural and functional interrelationships of plants and animals constituents;
2. Identify animal species according to its existent anatomic and physiologic particularities, either on a digestive or metabolic level, recognizing its different nutrient requirements;
3. Know methods and systems of foods evaluation;
4. Use adequate methods to formulate diets for different animal species and different production level.
5. Know the rules of animal feed produced according to organic methods.
Program
The syllabus is organized into two modules:
Module 1 (50%):
Food composition and systems of food analysis.
Classification, structure, function, and metabolism of carbohydrates, lipids, nitrogenous compounds, vitamins, and minerals in animal nutrition.
Anatomy, physiology, and microbiology of the digestive system of different animal species and main digestion products.
Digestibility of food.
Energy value of food and energy partition within the animal.
Importance of amino acids balance in protein synthesis. Nutrient requirements of animals.
Module 2 (50%):
Nutritional characterization of foods.
Evaluation of foods: energy and protein systems for ruminant and monogastric animals.
Factors that affect the nutritional value of foods.
Control mechanisms and factors that affect food and water intake.
Formulation of diets.
Feedstuffs legislation for organic animal production.
Raw materials, additives, and other substances permitted and not permitted in feed for organic production.
