High level structure (HLS/Annex SL): context, leadership, planning, support, Operation, Evaluation and improvement;
Field of application and scope of the SGSA;
Analysis of the organizational context and stakeholders (Clause 4);
Leadership, Food Safety Policy and responsibilities (Clause 5);
Organizational risk management vs. operational hazard analysis;
Operational planning and control: operational PPR (PPRo) and PCCs.
Module II-practical implementation of the SGSA
Definition of the scope and flow diagram of the production process;
Hazard Analysis: characterization and Evaluation Methodology;
Determination of Ppros and PCCs: criteria and critical limits;
Monitoring plan, corrective actions and verification;
Document management: hierarchical structure, control of documents and records;
Case study: simulated implementation in a dairy company (Group analysis).
Module III-evaluation and continuous improvement
Monitoring, measurement, analysis and evaluation of the SGSA;
Internal audit according to ISO 19011: planning and conduct;
Non-conformities, corrective actions and management review;
SGSA performance indicators and continuous improvement;
Application work: preparation of ISO 22000 implementation plan for assigned company (written deliverable).
Assessment
Presentation and defense of the work of practical application (simulation of review meeting by management).
